Yesterday and today, I substituted shaved, smoked turkey breast for the pork snausage. A little less filling, but it still stays with ya all day, and it tastes incredibly good. Used a little more onion, and some authentic Mexican salsa whipped into the eggs for more chipotle flavor.
As you can see, I FAILed the flop, so the half that had the turkey in it is in the folded-over portion, while the half with the cheese is mostly exposed. I also put under the broiler for a few seconds to finish it, as DWD suggested, but it did brown the whole affair more than I like, and I noticed no fluffiness increase, so I will likely skip this step next time.
Tomorrow: Spinach!
