Plateauing around 196lbs, it seems, so nothing impressive to report. Will try harder. I've run over my caloric allotment a couple of times this week, so I just need to not be as carefree this coming week. That will be easier, 'cause it's the week before payday.  :)

Eggnostic Perfection

  • 2 large eggs
  • 1 medium flour tortilla
  • 2 oz diced tomatoes & green chiles (Aldi, Rotel); 1/5th can*
  • 1 oz coarsely diced onion (~1/4" cubes)
  • 1 oz. shredded cheese (Aldi Happy Farms Italian Style shredded, used here)
  • 1 oz. black forest ham
  • 1-2 sec. spray of canola oil (aerosol)
  • pinch ea. of garlic & onion powder (optional, to taste)
  • pinch ea. of red pepper seed and chili powder (optional, to taste)
  • pinch ground black pepper (optional, to taste)
  • 1/2 oz frozen corn (optional)
  • Sprig of cilantro (coarsely chopped; optional)
Drain all liquid from diced tomatoes/chiles. Saute contents of can in 8" saucepan sprayed with canola oil over medium heat until all remaining liquid evaporates. *Reserve 80% of contents of can for future meals. Add frozen corn (optional).

Hold flour tortilla (8") under running water for 1 second, each side. Drain, & place on foil on top rack of oven/broiler. Place three slices of thinly-sliced black forest ham on tortilla, sprinkle cheese on top.

Reduce heat by ~30%. Crack and pan-scramble two large eggs in 8" saucepan containing tomato/chile mix, already reduced. There should be almost no liquid in the pan. Stir in raw diced onion, and garlic, onion and chili powders at this time. Turn on broiler to melt cheese and to toast tortilla very lightly.

Cook until eggs are set, then flip once, and reduce/discontinue heat. Do not brown egg mixture!  Add ground black pepper (optional).

After 1 minute (or when done), remove egg mixture, and place on flour tortilla. Allow to cool for 1-2 minutes, then fold into taco shape and serve with sprig of cilantro. Can be served wrapped in foil square. Handy!

Serves one; 346 calories.

Vacation, hot dogs, beer. Plateau week!  However, pants keep feeling bigger, so packing on a pound of muscle during the past week isn't out of the question (calisthenics, isotonics). Planet Fitness?  Maybe. Work will reimburse 100%!

Current weight: 196.2 lbs.
Difference: 21.8 lbs.

Week leading up to  8/6, that should read. Prior seven days rolling, is how that works, I've discovered.

UPDATE: Strike that last. As the bar chart shows, the week starts on Monday, so... wrong!

Turkey Balls!

Dinner -- turkee meetballs, fried brown rice with veggies. Yumm-O. 500 calories, and this was a LOT of food. Still ending up ~400 calories under, even with beer!

Buy one for $3, get another for $1!  Chinese bargains!

Another Thursday In The Books

Man, this baby was dizzzzzzzzy  after coming out of the spin cycle.

Lord Kelvinator, Master of Shadows. POE kitteh (pink-orange ear). Dreamsicle pussy, with most of the orange licked off.

Night gives way to Sleep, and Sleep gives way to Day. Day gives way to HP Tech Support, backflow testing and cutting up at City Hall with many. Then... lunch!

Today, that was 2oz. of chunk light tuna, and a cup of cottage cheese. Seasoned with garlic & onion powders, chili powder, and nothing.

Pre-lunch skritches!
